 Course information

Aimed at building up confidence, efficiency and improved customer service levels, this course is focusing on the soft skills needed to optimize the wine service, and satisfy the expectations of the patrons. Through lectures, role plays and practical cases, the student will learn how to properly present and serve wines, manage glassware and temperatures, understand food pairing and deal with clients’ expectations. These skills will be validated by an exam at the end of the full one day of learning. Duration 9 hours 

Previous knowledge required

Although extensive wine knowledge is not required, the applicant must meet the required level of entry for this course by seating the orientation assessment examinationBasic knowledge of wines such as WSET level 1, CWA SA Wines introduction or IWEC Wine level 1 will be expected and the applicant should have one year experience as a waiter in the hospitality industry or equivalent.

Presentation of wine service rules, and career path toward sommelier. Wine basics to use in the hospitality service - Service preparationGlassware and temperature management. Wine service, bottle and glass, service equipment. Customer services, wine language, service etiquette, recommendations, dealing with complaints, use of language and body language. Food pairing rules, and how to guide patrons while optimizing sales. 

Outcome

At the end of the day, a written exam will validate the knowledge of the students. Pass rate is 60%.

Graduated learners will receive their Wine Ambassador pin so they can proudly display their achievement on the floor. Wine Ambassador Certification is the first step toward becoming a SASA certified Wine Steward, and obtaining the prestigious title of SASA Certified Sommelier.

BEER AMBASSADOR CERTIFICATE

Course information

A full day’s workshop aimed at providing the candidates with a solid basic knowledge of beers, and the skills to optimize the sales and service of beers within the hospitality industry. This workshop is targeted at waiters and floor managers within the higher quality segment of the on-trade market. The aim is to empower candidates to bring added value, improve the image of beers and improve the customer’s experience in a restaurant and up market bar environment

At the end of the day, a written exam will validate the knowledge of the students. Pass rate is 50%. Graduated learners will receive their Certificate and their Beer Ambassador pin so they can proudly display their achievement on the floor. Certificate of attendance will be delivered.

SASA JUNIOR SOMMELIER COURSE


Course information

This course is preparing for the official SASA (South African Sommelier Association) Junior Sommelier certification. The course covers the elements of wine service that are expected to be handled comfortably by any hospitality professional in that role by international standards, it is intended to be a natural progression for a wine waiter wishing to develop his/her skills. Duration 2 days + 1 day exam

 

Previous knowledge required

WSET level 2 or CWA Certificate with a good knowledge of foreign wines is required plus a good knowledge of the hospitality environment. Applicant should have two years’ experience as a wine waiter in the hospitality industry or equivalent.

We strongly suggest personal study, and this is why every candidate must sit the orientation examination and be given the best chances of success. Aggregated score of 70% at the orientation is required.

 

Syllabus

Introduction, Purpose of the course, history, purpose and career path of a sommelier.

Service preparations, Setup for service, glassware, stock. Wine service, tray service, bottle service, presentation, equipment, wine list, serving order. Customer service, service etiquette, recommending, complaints, language. Product training, faults, food and beverage in combination

 

Outcome

After two days of intense training, and some practice on the floor, the student can present the examination organized by SASA, member of the ASI. This certification is internationally recognized.

SASA Junior Sommelier exam is two folds: A theory examination with multiple choice questions covering basic wine knowledge not covered in SASA’s Wine Steward course, together with wine service questions covered in the course. And a practical dining room scenario where the students will be tasked to show their ability to handle table setup, basic wine service and communicate accurately with any guest in a hospitality context. Pass mark is 60% on each module. SASA Junior Sommelier Certification is the path toward becoming a SASA certified Sommelier level 2 and ASI International Sommeliers level 3.

ASI INTERNATIONAL SOMMELIER DIPLOMA MASTERCLASS

Course information

This course is preparing you for the ASI Sommelier International Diploma. Since the program for ASI Diploma is covering all the skills need by an international sommelier, this course will focus on preparing the exam, dealing the stress management, technical skills and client management. Duration 1 day + 1-day exam

 

Previous knowledge required

This course is open to sommelier with at least 5 years of experience. WSET Diploma level advisable or equivalent. A strong knowledge of the international hospitality scenes and as well a good knowledge of water, tea, coffee, beer, spirits, sake and food preparation are required.

SASA Sommelier certification, or CMS Advanced level or equivalent.

Food Pairing, understanding and lateral thinking to offer an experience to the client

Beverage Sales, how to confidently sale your beverages to your clients.

Beverages tasting, analysis and description in a sommelier style.

Essay skills, Exam rehearsal.

 

Outcome

The ASI Sommelier International Diploma is the highest certification in the ASI world. It crowns the most talented sommeliers of the 60 countries member of the ASI. The exam takes place once a year, and the same questions are presented to all the candidates worldwide. The ASI Diploma must be presented in one of the three official ASI language: English, French or Spanish. This language must be a foreign language to you, and not your mother tongue. If you present in your own ASI official language then you can only be awarded the bronze level if you reach the pass marks. If you seat in a foreign language the pass mark grants you silver level. Exceptional distinction grant you the gold level.

You need to be a SASA member to seat the exam, or a member from another ASI national association.
