The Sherry Triangle

The finest Sherry is produced inside of the triangle shaped region connecting Jerez de la Frontera, Sanlúcar de Barrameda and El Puerto de Santa María. Grapes are grown across the Andalucía region and brought into the triangle for production and ageing, sometimes for many years. Sanlúcar is now a separate DO due to its cooler climate close to the sea that adds a fresh and delicate saltiness to the wines. Called Manzanilla, it far outsells Fino in Spain and is much more fashionable. The wineries are called Bodegas and are built with high ceilings or roofs often with open sides to allow to cool sea air through which helps to keep the barrels of the soleras cool and prevent spoilage.
